COFFEE & COCOA CHILI

INGREDIENTS

4 strips thick cut bacon, diced

1 medium onion, diced

3 garlic cloves, minced

1-2 jalapeño or serrano peppers, minced (optional)

2 lb BLUE DOG FARMS GRASS FED & GRASS FINISHED GROUND BEEF!

2-3 sweet potatoes, skinned and diced ¼” pieces (about 4 cups)

4-6 carrots, skinned and diced ¼” pieces (about 2 cups)

1 TBS smoked paprika

1 TBS chili powder

DIRECTIONS

1.5 tsp coriander

1.5 tsp salt

1 tsp ground black pepper

1 tsp ground cumin

1 tsp chipotle powder

1.5 TBS unsweetened cocoa powder 2 TBS maple syrup

1 12 oz can butternut squash puree 2 cups brewed coffee

14 oz tomato sauce

14 oz fire roasted tomatoes

1) In a Dutch over or large pot, sauté the bacon over medium heat. Once the fat has begun to render, add the onions, garlic and peppers (if using). Once the onions are translucent add the ground beef, raise the heat to medium-high and continue to sauté.

2) Add the sweet potatoes, carrots, paprika, chili powder, coriander, salt, pepper, cumin and chipotle powder and cook for about 2 minutes. Add the cocoa powder, maple syrup and butternut squash puree and cook for another 2 minutes.

3) Add the fire roasted tomatoes, coffee and tomato sauce and mix thoroughly. Bring to a boil then reduce to a simmer and cook uncovered for 30 minutes or until desired consistency. 4) Taste and adjust seasoning. Serve with your choice of toppings: cheese, sour cream, avocado, jalapeño, hot sauce. Cornbread makes a great accompaniment, enjoy!
